Observed good employee hygienic practices: clean uniforms, hair restraints, proper use of gloves, and hand washing; did not observe any employees working that would require restriction or exclusion today. All hand sinks are accessible and fully-supplied with materials to promote good hand washing practices. Tuna salad was made from ambient ingredients and portioned into small containers to aide cooling while being served and is within the time and temperature parameters to cool properly with 2 hours remaining. Date-marking is consistent, utilized correctly, and disposals removed from service. All other areas in substantial compliance. |
