Priority Item The sanitizer concentration for chlorine in the dishwasher is at 0 ppm.
Repair dishwasher to allow proper sanitizer concentration of 50 ppm to 100 ppm or per manufacturer. Until dishwasher is repaired, use 3-compartment sink to wash, rinse, and sanitize utensils and dishes. A virtual follow-up shall occur within 10 to 14 days. Correct By: 11-Jul-2023
5-205.11 / USING A HANDWASHING SINK
Priority Foundation Item Corrected During Inspection Handsink being used for storage at time during inspection and is unavailable for proper handwashing. Handsink is not usually used per PIC.
Train food employees that handwashing sinks shall not be used for any other purpose than handwashing.
Action Taken: PIC cleaned noted item and communicated to staff to use handsink and use handsink for handwashing only. Correct By: 27-Jun-2023

6-301.12 / HAND DRYING PROVISION
Priority Foundation Item Corrected During Inspection Observed no paper towel at the handsink located in the far corner of the kitchen for hand drying.
Provide single-use paper towel at handsink to facilitate proper handwashing.
Action Taken: PIC provided noted item.

FL 289.2129 / Certification of managerial employee under program accredited by American national standards institute; rules.
Core Item The food safety manager's certification has not been completed through an approved training program.
The food safety manager must complete an approved training program. Correct By: 20-Feb-2024
Comments
This was a routine inspection. Facility is very clean and organized. Observed glove use. PIC is knowledgeable of duties. Observed an approved sanitizer and an approved food source.

A virtual follow-up shall be conducted within 10 to 14 days for the correction of violation 4-501.114.

If there is a fifth repeat of violation 4-501.11 upon next routine inspection, an office conference shall be held at GCHD along with the associated fees due to noncompliance of the 2009 Food Code.
