Routine, operational evaluation. No food preparation was observed on this date. The cleaning violations from the last routine had been corrected. A cleaning schedule was posted in the kitchen. A food thermometer was available for use. Chlorine test strips were available to monitor sanitizer strength. Manager certification is current, but will expire in November. Be sure to have the certification renewed or another worker with approved certification.
