3-304.12 / IN-USE UTENSILS, BETWEEN USE STORAGE Core Item Corrected During Inspection Observed stir spoons sitting in cups of ice water.. Store in-use utensils or dispensing utensils in one of the following manners: 1) In the food with their handles above the top of the food and the container. 2) In food that is not potentially hazardous with their handles above the top of the food within containers or equipment that can be closed. 3) On a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food-contact surface of the food preparation table or cooking equipment are cleaned and sanitized every 4 hours. 4) In running water of sufficient velocity to flush particulates to the drain. 5) In a clean, protected location if the utensils are used only with a food that is not potentially hazardous. 6) In a container of water if the water is maintained at a temperature of at least 135°F. Action Taken: PIC placed stir spoons in containers without water. |
3-501.18 / READY-TO-EAT, POTENTIALLY HAZARDOUS FOOD, DISPOSITION Priority Item Corrected During Inspection Observed 3 (1 lb) containers of tuna salad that were bulging, with an expiration date of 12/19/22 in reach in cooler. Discard potentially contaminated or unsafe foods. Action Taken: PIC discarded the 3 lbs of tuna salad. |
3-501.19 (B) (1, 3-4), (C)(1, 4-5) / TIME AS A PUBLIC HEALTH CONTROL Priority Item Corrected During Inspection Observed time as a public health control being used for eggs. There was no time stamp in place. The temperature of the eggs was below 70 degrees.] Place a time stamp on the noted item. Action Taken: PIC placed a time stamp on the eggs. |
4-602.11 (A-D) / EQUIPMENT FOOD-CONTACT SURFACE Priority Item Repeat Corrected During Inspection Observed build-up on the wands of the espresso machine, which indicated that it had not been washed in the last 4 hours prior. Clean food contact surfaces used with potentially hazardous foods a minimum of every 4-hours. Action Taken: PIC washed, rinsed, and sanitized espresso machine wands. |
