Priority Item Corrected During Inspection 3 containers of popcorn chicken and one container of rice were improperly hot held in Wittco hot holding unit. Internal temperatures of TCS foods were an average of 84 degrees F.
Maintain hot potentially hazardous foods at or above 135°F.
Action Taken: PIC removed TCS foods from warmer and then reheated foods to 194 degrees F (avg). TCS foods were then placed on steam table (156 degrees F). Correct By: 06-May-2019

All hot and cold holding temperatures were outside the danger zone.

License type for this facility shall be upgraded from satellite school kitchen to full prep school kitchen. License holder shall be subjected to plan review and additional license fees.
