| 3-501.16 (A)(2), (B) / POTENTIALLY HAZARDOUS FOOD, COLD HOLDING Priority Item Corrected During Inspection The following TCS foods were being improperly cold held with a minimum internal temperature of 48 degrees F in Frigidaire Combo EH: 16 cartons of milk (34 lb), Cheese (3 lb), Potato Salad (10 lb) and Yogurt (4 lb). Digital thermometer of RIC displayed 39 degrees, however, ambient air temperature was 50 degrees F. TCS foods have been in cooler for at least 24 hours. After lowering temperature control gauge, ambient air temperature by the end of inspection was 41 degrees F. Maintain cold potentially hazardous foods at or below 41°F Action Taken: PIC discarded above listed TCS foods and moved recently delivered TCS foods to High School 2 door RIC.
