Priority Item Corrected During Inspection Refried beans and ground beef were hot holding at an internal temperature ranging from 117-120°F. Hot holding unit appears to be failing. These foods were placed in hot holding unit 1 1/2 hrs before arrival for inspection.
Reheat refried beans and ground beef to 165 degrees and then maintain hot potentially hazardous foods at or above 135°F.
Action Taken: Cook immediately reheated beans and ground beef on the stovetop to 165 degrees and then hot held at 135 degrees.

Proper glove use and food handling techniques observed. All cold holding equipment was maintaining 41 degrees and below. Proper cooling methods observed (refried beans cooling in ice bath)
