3-501.16 (A)(2), (B) / POTENTIALLY HAZARDOUS FOOD, COLD HOLDING
Priority Item Repeat Corrected During Inspection Walk in cooler, prep line cold top and reach in cooler with drawers are incapable of maintaining temperatures of TCS foods at 41 degrees and below. TCS foods located in these coolers had a minimum temperature of 45 degrees. TCs foods such as sliced tomatoes, lettuce, turkey and roast beef (recently defrosted) were cut an hour prior to inspection. Ham (20 lb), fajita vegetables (2 lb), brisket (10 lb), gyro meat (10 lb), turkey (30 lb) and corned beef (5 lb) were in the cooler for more than 6 hours, according to PIC. Sherman's Heating and Cooling were contacted during inspection to repair coolers.
Use time as a control for TCS foods located in reach in cooler with drawers. Discard TCS foods that were in cooler for more than 6 hours.
Action Taken: PIC time stamped TCS foods in reach in cooler with drawers to be used or discard in 3 hours. PIC discarded ham (20 lb), Fajita vegetables (2lb), Brisket (10 lb), Gyro Meat (10 lb), Turkey (30 lb) and Corned Beef (5lb) that were in walk in cooler for more than 6 hours. A follow up inspection is scheduled for 1/4/19 to ensure walk in cooler and reach in cooler with drawers are maintaining temperatures at or below 41 degrees.
Reach in cooler with drawers is scheduled to be replaced in January 2019.
