Priority Item Corrected During Inspection Meat balls cooling at a temperature of 47F from 4 hour prior in the walk in cooler. Per person in charge meal balls where in a bag cold prepped in a container and placed back in the cooler.
Discard above noted food. Cool down prepped food within 4 hours when at ambient temperature. .
Action Taken: Operator discarded food items.

Priority Foundation Item Corrected During Inspection Meat balls cooling at a temperature of 47 from four hours prior. The meat balls where in a cooler in a bag and prepped outside for not too long then placed back in the walk in cooler per person in charge.
Discard above noted food item.
Action Taken: Operator discarded above noted food items.
