Priority Item Corrected During Inspection Observed 3 packets of chicken (12 lbs) and 2.5 cases of cheese (45 lbs) with a minimum internal temperature of 53 degrees in Bev Air 2 door RIC (ambient air temperature 60 degrees). Bev Air 2 door cooler containing the above listed TCS foods has been unplugged for more than 8 hours, according to PIC. Sanitarian observed an ambient air temperature of 38 degrees after cooler was plugged in.
Discard above listed TCS foods that have been out of temp for more than 4 hours.
Action Taken: PIC immediately discarded TCS foods. Correct By: 13-Jul-2018

Priority Item Corrected During Inspection Observed 3 packets of chicken (12 lbs) and 2.5 cases of cheese (45 lbs) with a minimum internal temperature of 53 degrees in Bev Air 2 door cooler. Unplugged cooler had an ambient air temperature of 60 degrees. Per PIC, TCS foods were in cooler for more than 8 hours.
Discard potentially contaminated or unsafe foods.
Action Taken: PIC immediately discarded TCS foods. Correct By: 13-Jul-2018

3-501.19 (A), (B)(2), (C)(2-3) / TIME AS A PUBLIC HEALTH CONTROL
Priority Foundation Item Corrected During Inspection The following TCS foods were using time as public health control with no documentation. These foods had been out of temperature for less than an hour per PIC and were not in disposition. 2 lbs of sliced tomatoes (58 degrees), 2 lbs of chopped lettuce (59 degrees), 4 lbs of cheese (59 degrees).
Create a plan for time as a public health control and maintain the documentation onsite.
Action Taken: PIC time stamped the above listed TCS foods to be discarded in 3 hours. Correct By: 13-Jul-2018
