4-602.11 (A-D) / EQUIPMENT FOOD-CONTACT SURFACE Priority Item Corrected During Inspection The panini spatula heavily soiled with dry food debris last clean a night prior,the ice cap wands and espresso wands have not been washed, rinsed or sanitized from more than 4 hours prior; the stir spoon has not been cleaned for longer than 4 hours prior. Wash, rinse and sanitize above noted items every 4 hours when in constant use with TCS foods. Action Taken: Employee washed, rinsed and sanitized noted items. |
