Priority Item Corrected During Inspection Shredded chicken holding at a temperature 113F from unknown time(holding unit was turned off).
Discard above noted food. In the future maintain hot food at 135F or above.
Action Taken: Employee discarded food.

4-602.11 (A-D) / EQUIPMENT FOOD-CONTACT SURFACE
Priority Item Corrected During Inspection The panini spatula heavily soiled with dry food debris last clean a night prior,the ice cap wands and espresso wands have not been washed, rinsed or sanitized from more than 4 hours prior; the stir spoon has not been cleaned for longer than 4 hours prior.
Wash, rinse and sanitize above noted items every 4 hours when in constant use with TCS foods.
Action Taken: Employee washed, rinsed and sanitized noted items.
