Routine, operational evaluation. An air gap is required on the drainlines from the 3-compartment sink and the ice machine. Test strips are not available for the sanitizers used. Food thermometer was not found on this date. Manager certification is not current. A follow-up will be conducted in 2 weeks. At that time have the drainlines secured by air gap; provide test strips; provide food thermometer; registration in an approved manager certification class or for the test. If a second follow-up is required, a monetary fee will be assessed.
