4-501.114/MANUAL AND MECHANICAL WAREWASHING EQUIPMENT - SANITIZER NOT BEING USED PER MANUFACTURER Observed sanitizer concentration for the chemical dishwasher with sanitizer concentration of 0 ppm. Bar does have 3 compartment sink to use as alternative. Informed PIC that it needs to be repaired before use. Use test strips to measure proper sanitizer concentration and adjust the concentration accordingly.
