Critical Corrected During Inspection PIC unable to demonstrate knowledge of cleaning and sanitizing. OBSERVED PIC WAS UNABLE TO DESCRIBE THE PROPER ORDER FOR WASHING AND SANITIZING DISHWARE AND UTENSILS. IN ORDER TO PROPERLY AND EFFECTIVELY WASH AND SANITIZE THE DISHWARE, IT MUST BE DONE IN THE CORRECT ORDER WHICH IS WASH, RINSE AND SANITIZE. THE PIC WAS ABLE TO CORRECTLY STATE THE ORDER AFTER A DEMONSTRATION.

Critical Equipment food-contact surfaces or utensils are unclean. OBSERVED ICE MACHINE TOP COMPARTMENT PIECES WERE SOILED. IN ORDER TO PREVENT CONTAMINATION, ALL FOOD CONTACT SURFACES MUST BE CLEANED AND SANITIZED ROUTINELY. PLEASE CLEAN AND SANITIZE ALL COMPONENTS OF THE MACHINE.

Critical Corrected During Inspection Improper use of a poisonous or toxic substance. OBSERVED WINDOW CLEANER USED IN THE MIDDLE COMPARTMENT OF THE 3 COMPARTMENT SINK AS A METHOD TO REDUCE SPOTTING ON THE GLASSWARE. IN ORDER TO PREVENT CONTAMINATION, NO CHEMICALS SUCH AS WINDOW CLEANER MUST BE USED TO CLEAN DISHES. THAT COMPARTMENT OF THE SINK WAS DRAINED AND THE PIC WAS TOLD TO CEASE USING THAT CHEMICAL AND PURCHASE A RINSE AID FOR THE DISHES IF NECESSARY.
