VII - P - Protection from Contamination: Observed raw animal foods separated by type during storage, preparation, holding, and display. OBSERVED RAW ANIMAL PRODUCTS STORED AWAY FROM READY TO EAT FOODS IN THE WALK IN COOLER. TO PREVENT CROSS CONTAMINATION, FOOD EMPLOYEES ENDURED THAT RAW ANIMAL PRODUCTS WERE STORED AWAY FROM READY TO EAT FOODS.
VI - P - TCS Food: Observed food employee cooling cooked time/temperature controlled for safety foods from 135°F to 70°F within two hours and from 70°F to 41°F or below within four hours. OBSERVED THE OPERATOR PROPERLY COOLING THE BEANS IN THE WALK IN COOLER. TEMPERATURE LOGS ARE KEPT ON FILE FOR TCS FOODS ITEMS THAT ARE COOLED. TO LIMIT THE GROWTH OF PATHOGENS THAT MAY CAUSE A FOODBORNE ILLNESS, TCS FOODS ARE RAPIDLY COOLED FROM 135 -70 DEGREES F WITHIN 2 HOURS, AND FROM 70-41 DEGREES F WITHIN 4 HOURS.
I - P - Employee Health: The operation had an employee health policy on file. THE OPERATION REQUIRES FOOD EMPLOYEES TO REPORT INFORMATION ABOUT THEIR HEALTH AS IT RELATES TO ILLNESS THAT CAN BE TRANSMITTED THROUGH FOOD.

THE PERSON IN CHARGE WILL USE STERAMINE TABLETS UNTIL THE QUATERNARY AMMONIUM SANITIZING SOLUTION DISPENSER IS IN GOOD WORKING ORDER.
