3717-1-04.4(N)(1) / Manual and mechanical warewashing equipment, chemical sanitization (chlorine) - temp., pH, concentration, and hardness
Critical Corrected During Inspection Chlorine sanitizing solution at incorrect temperature and/or concentration. OBSERVED DISH MACHINE CHLORINE-BASED SANITIZER TO BE AT 0PPM AT THE TIME OF INSPECTION. PIC replaced bucket and primed machine for appropriate concentration between 50 and 100ppm.

3717-1-02.3(C) / Hair restraints - effectiveness.
Food employee(s) not wearing a hair restraint. OBSERVED FOOD HANDLING EMPLOYEE TO BE WITHOUT HAIR RESTRAINT AT THE TIME OF INSPECTION.

3717-1-04.1(H) / Nonfood-contact surfaces - cleanability
Nonfood-contact surfaces not easily cleanable. OBSERVED SHELVING IN WALK-IN COOLER TO HAVE FLAKING PAINT, MAKING THE SURFACE NO LONGER SMOOTH AND EASILY CLEANABLE. THIS SHELVING MUST BE REPLACED.

Non-food contact surfaces of equipment are unclean. OBSERVED HOOD FILTERS TO HAVE DUST AND GREASE BUILDUP. TO REDUCE POTENTIAL FOR CONTAMINATION, FILTERS MUST BE CLEANED AS OFTEN AS IS NECESSARY TO PREVENT BUILDUP.

Facility not maintained clean. OBSERVED FLOORING UNDER STOVE AND FRYER TO HAVE GREASE SPILLAGE AND DEBRIS BUILDUP.
