Critical Corrected During Inspection TCS foods not being hot held at the proper temperature. OBSERVED CHEESE SAUCE HELD AT 125 DEGREES F IN HOT HOLDING. TO PREVENT THE GROWTH OF PATHOGENS THAT MAY CAUSE A FOODBORNE ILLNESS, TCS FOODS SHALL BE HELD AT 135 DEGREES F OR ABOVE IN HOT HOLDING.

Facility does not have an employee with level two certification in food protection. THE OPERATION SHALL SEND FOOD PROTECTION MANAGERS CERTIFICATION TO THE OHIO DEPARTMENT OF HEALTH FOR APPROVAL.
