OBSERVED AN EMPLOYEE COMING IN FOR THEIR SHIFT OR BACK FROM A BREAK AND STARTING TO WORK FOOD SERVICE WITHOUT WASHING THEIR HANDS FIRST. IN ORDER TO PREVENT CONTAMINATION, ALL FOOD SERVICE EMPLOYEES MUST WASH THEIR HANDS WHEN COMING IN FOR THEIR SHIFT OR RETURNING FROM A BREAK. Critical Corrected During Inspection Handwashing sink not accessible. OBSERVED THE HANDSINK WAS BLOCKED BY A CUTTING BOARD. IN ORDER TO PROMOTE GOOD HAND HYGIENE, THE HANDWASHING SINK SHOULD BE ACCESSIBLE AT ALL TIMES. PIC MOVED THE CUTTING BOARD.

Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. OBSERVED VANILLA SMOOTHIE MIX HOLDING AT 47 DEGREES IN THE UNDER COUNTER COOLER. IN ORDER TO PREVENT THE GROWTH OF PATHOGENS, TCS FOODS MUST BE MAINTAINED AT 41 DEGREES F OR BELOW WHEN COLD HELD. PIC MOVED ITEMS TO THE WALK IN COOLER TO COOL DOWN TO THE APPROPRIATE TEMP.

3717-1-05.3(C) / Sewage and other liquid waste: Backflow prevention.
Critical Repeat Direct connection between the sewage system and a drain originating from equipment in which food, portable equipment, or utensils are placed. OBSERVED THE CONDENSATE LINE FOR THE WALK IN COOLER IS DIRECTLY IN THE DRAIN IN THE FRONT OF THE STORE. IN ORDER TO PREVENT BACKFLOW INTO THE DRAIN, AN AIR GAP MUST BE CREATED BETWEEN THE DRAIN AND THE CONDENSATE LINE. PLEASE REPAIR THIS ISSUE.
