Critical Corrected During Inspection PIC unable to demonstrate knowledge by having no critical violations. OBSERVED CRITICAL VIOLATION AT THE TIME OF INSPECTION. PERSON IN CHARGE NEEDS TO MAINTAIN OVERSIGHT OF OPERATION TO ENSURE THAT CRITICAL VIOLATIONS DO NOT OCCUR.

3717-1-05(H) / Capacity.
Critical Corrected During Inspection Water source and/or hot water capacity not sufficient. OBSERVED MAXIMUM WATER TEMPERATURE OF 100F THREE COMPARTMENT SINK. HOT WATER OF 110F IS REQUIRED FOR MANUAL WASHING OF DISHES. HOT WATER HEATER THERMOSTAT WAS ADJUSTED DURING INSPECTION.

Repeat Equipment not approved by a recognized testing agency. OBSERVED NONCOMMERCIAL EQUIPMENT IN KITCHEN SUCH AS INSIGNIA CHEST FREEZER, FRIGIDAIRE REFRIGERATOR, AND GE MICROWAVE. WHEN THESE ITEMS ARE NO LONGER FUNCTIONAL OR DEVELOP SURFACES THAT ARE NO LONGER SMOOTH AND EASILY CLEANABLE THEY MUST BE REPLACED WITH NSF OR EQUIVALENT COMMERCIAL ITEMS.
