3717-1-03.4(F)(1)(a) / Time/temperature controlled for safety food - hot holding.
Critical Corrected During Inspection TCS foods not being hot held at the proper temperature. Observed not all TCS foods, prepared sausage dog at 110°F, being hot held at the proper temperature. Discussed with management and permitted to increase the control temperature which is the dial to the hot holding equipment due to the alloted minutes of time in the danger zone.

Equipment components are not intact, tight or properly adjusted. Observed water build-up on the lower shelf in the reach-in cooler. remove the observed water build-up from the lower shelf in the reach-in cooler.
