II - P - Good Hygienic Practices: Food employee(s) were eating, drinking or using tobacco in designated area. OBSERVED EMPLOYEES TO BE EATING AWAY FROM FOOD PREPARATION AREAS.
III - P - Preventing Contamination by Hands: Observed food employee washing hands prior to donning single use gloves. OBSERVED FOOD HANDLING EMPLOYEE TO WASH HANDS AND CHANGE GLOVES BETWEEN TASKS.
VI - TCS Food: TCS foods were not being held at the proper temperature. OBSERVED PREP COOLER TO BE OVERCROWDED, REDUCING AIRFLOW AND COOLING ABILITY. ITEMS WERE SPLIT INTO OTHER COOLERS TO INCREASE COOLING CAPACITY.
