THE PERSON IN CHARGE MUST ENSURE TCS FOOD SUCH AS COOKED WHITE RICE STORED IN COLD HOLDING IS STORED AT TEMPERATURE OF 41-DEGREES FAHRENHEIT OR LESS TO MINIMIZE THE GROWTH AND SPREAD OF PATHOGENS OF PUBLIC HEALTH CONCERN.
