Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. OBSERVED ALL THE TCS FOOD IN THE LARGE PREP COOLER WAS HOLDING AT 55-63 DEGREES F. THE COOLER WAS NOT PLUGGED IN COMPLETELY AND THE COOLER WAS OFF. IN ORDER TO PREVENT THE GROWTH OF PATHOGENS, ALL COLD HELD TCS FOOD MUST BE HELD AT 41 DEGREES F OR BELOW. ALL ITEMS WERE VOLUNTARILY DISCARDED AT THE TIME OF THE INSPECTION.

IN ORDER TO PREVENT THE SPREAD OF FOODBORNE ILLNESS, ALL EMPLOYEES MUST READ AND SIGN THE EMPLOYEE HEALTH POLICY. ALL POLICIES MUST BE KEPT ON SITE. PIC WILL BE EMAILED A COPY OF THE POLICY.

III - Preventing Contamination by Hands: The hand washing sink(s) were not accessible for convenient use by employees. OBSERVED THE HANDWASHING SINK WAS BLOCKED BY A BAKING PAN WHICH WAS REMOVED AND THEN AGAIN BY KNIVES. IN ORDER TO ALLOW FOR GOOD HAND HYGIENE, ALL HANDWASHING SINKS MUST BE KEPT FREE AND CLEAR AND ACCESSIBLE. ITEMS WERE REMOVED FROM BLOCKING THE SINK

VI - TCS Food: TCS foods were not being held at the proper temperature. OBSERVED ALL TCS FOOD ITEMS IN THE LARGE PREP COOLER WERE HOLDING AT 55-63 DEGREES F. IN ORDER TO PREVENT THE GROWTH OF PATHOGENS, ALL COLD HELD TCS FOOD MUST BE AT 41 DEGREES F OR BELOW. ALL ITEMS WERE VOLUNTARILY DISCARDED.
