Critical Corrected During Inspection PIC unable to demonstrate knowledge by having no critical violations. OBSERVED PIC TO HAVE CRITICAL VIOLATION DURING INSPECTION.

3717-1-03.4(D) / Cooling - temperature and time control.
Critical Corrected During Inspection Improper cooling of TCS food. OBSERVED CARNITAS COOLING IN 6 INCH HOTEL PAN IN WALK IN COOLER. PRODUCT WAS 100F AT TIME OF INSPECTION AND HAD BEEN COOLING FOR NEARLY TWO HOURS. TO MITIGATE BACTERIAL GROWTH, CARNITAS WERE REHEATED to 165F AND THE COOLING PROCESS RESTARTED. Discussed logging the temperatures during cooling to ensure the two-stage cooling process is occurring and transferring product into shallow pans to increase airflow.

Improper method for cooling TCS foods. OBSERVED CARNITAS COOLING IN HOTEL PAN OVER 4 INCHES DEEP. Discussed transferring cooling food to shallow pans ASAP to aid in cooling process.

Corrected During Inspection Working food containers not properly labeled. OBSERVED SQUEEZE BOTTLE OF OIL WITHOUT LABEL. PIC added label to bottle during inspection.

3717-1-03.2(Q) / Food storage - preventing contamination from the premises.
Improper storage of food items. OBSERVED PLASTIC CONTAINERS OF CHICKEN STORED IN WALK-IN COOLER ON FLOOR. TO PREVENT CONTAMINATION, ALL FOOD MUST BE STORED AT LEAST 6 INCHES FROM THE FLOOR. Discussed using plastic or dunnage racks to elevate food while storing.

3717-1-02.3(C) / Hair restraints - effectiveness.
Food employee(s) not wearing a hair restraint. OBSERVED LINE COOK TO BE WITHOUT BEARD NET.

3717-1-03.2(K) / In-use utensils - between-use storage.
Repeat In-use utensils improperly stored. OBSERVED KNIVES STORED BETWEEN PREP TABLE AND PREP COOLER. Discussed adding cleanable magnetic strips to the sides of the coolers which will not require sandwiching of blades.

3717-1-04.2(I) / Sanitizing solutions - testing devices.
No sanitizer test kit available. OBSERVED CHLORINE TEST STRIPS TO BE EXPIRED. QUAT STRIPS ARE ALSO REQUIRED FOR SANI BUCKETS.

3717-1-06.2(I)(3) / Lighting - intensity (50 FC)
Light intensity less than fifty foot candles in required areas. OBSERVED LIGHTING INTENSITY AT STOVE PREP COOLER TO BE 11 FC AND 27 AT FLATBREAD ROLLING STATION. Several light bulbs are nonfunctional and will require replacement.
