Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. The cut tomatoes were 50F, cut lettuce 51F and the humus was 46F and stored at room temperature during service. Either store at 41F or use time as a public health control. (CCP)

Corrected During Inspection In-use utensils improperly stored. The falafel maker was stored in water between use. Discontinue practice.

Re-use of single-service or single-use articles. The tahini containers are being reused after they are empty. Discontinue reusing single service food containers.

Equipment and/or utensils improper construction. The bulger wheat is stored in non food grade containers. Discontinue storing food in these containers.

Non-food contact surfaces of equipment are unclean. The shelves in the true refrigerator and the door to the office are soiled. Clean on a frequent basis.

Facility not maintained clean. The is a dust buildup of dust on the vent ducts in the kitchen. There is mold growing on the walls and ceiling in the walk in refrigerator. Clean on a frequent basis.

Will now use Time as a public health control for cut lettuce, tomatoes, humus and rice. Due to space limitations the two compartment sink will be used as follows; the left sink will be used as the handsink, the right sink will be used for washing vegetables in the morning and after that it will be used to rinse off dishes before it is put in the dishwasher.
