Comments
Hot holding chicken soup was observed at 184 degrees fahrenheit with cold holding slice tomatoes at 41 degrees fahrenheit indicating a good temperature control in tcs, (time control safety), food monitoring.
In regards to the complaint investigation compliant findings at this time of inspection based on observed and discussion with the owner for effective employee hand washing and tcs foods proper holding and cooking temperatures. Note: the tcs foods which primarily includes turkey and chicken soup are monitored at 37- 41°F in cold holding with cooking today at 188°Fprior to the immediate serving to the public in the cooking process. In addition, CDPH also has forwarded temperature log templates which the manager informed this would be implemented to help assist in ensuring proper temperatures for public food safety.
