Critical Corrected During Inspection Equipment food-contact surfaces or utensils are dirty. OBSERVED DIRT BUILD-UP INSIDE OF THE ICE MACHINE.
To prevent contamination, equipment food-contact surfaces and utensils shall be clean to sight and touch. IT WAS CLEANED AT THE TIME OF INSPECTION. Correct By: 06-Jan-2016

3717-1-04.2(G)(1) / Food temperature measuring devices - availability
Repeat A food thermometer was not readily accessible. OBSERVED THAT THERE WAS NOT A S SINGLE PROBE THERMOMETER AVAILABLE.
To prevent foodborne illness, food temperature measuring devices shall be provided and readily accessible for use. PROVIDE A SINGLE PROBE THERMOMETER TO VERIFY THE FOOD AND SANITIZER TEMPERATURE.
3717-1-04.2(I) / Sanitizing solutions - testing devices.
Repeat There is no test kit available for measuring the concentration of the sanitizer. OBSERVED THAT THERE WAS NOT A SANITIZER TEST KIT AVAILABLE.
To ensure proper sanitization, a test kit or other device that accurately measures the concentration in PPM (mg/L) of sanitizing solutions shall be provided. PROVIDE A SANITIZER TEST KIT TO VERIFY THE SANITIZER'S STRENGTH (CONCENTRATION).
3717-1-04.4(B) / Cutting surfaces.
The surfaces of cutting blocks or boards were severely scratched or scored and could not be effectively cleaned and sanitized.
Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced.
3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are dirty. OBSERVED DIRT BUILD-UP ON TOP OF, UNDERNEATH AND BEHIND THE LARGE STAND (WITH WHEELS) WHERE THE GRILLS ARE PLACED.
Nonfood-contact surfaces of equipment shall be kept clean. KEEP THE EQUIPMENT CLEAN TO PREVENT POSSIBLE PEST INFESTATION.
3717-1-05.1(S)(2) / Plumbing system - maintained in good repair.
The plumbing system was not properly maintained. OBSERVED THAT THE COLD WATER SIDE OF THE THREE COMPARTMENT SINK DOES NOT WORK FROM THE FAUCET.
A plumbing system shall be properly maintained. REPAIR THE THREE COMPARTMENT SINK SO THAT BOTH SIDES WORK PROPERLY.
3717-1-06.1(A) / Floors, walls, and ceilings.
Repeat Floors, walls, and/or ceilings were not smooth and easily cleanable. OBSERVED BROKEN FLOORING IN THE KITCHEN AREA.
Floors, floor coverings, walls, wall coverings, and ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable.
3717-1-06.4(F) / Drying mops.
Observed mops being dried using an unapproved method. OBSERVED A MOP ON THE FLOOR (LOCATED IN THE STORAGE ROOM NEXT TO THE PEPSI COOLER) AND A MOP INSIDE OF THE BUCKET 9LOCATED IN THE HALLWAY NEAR THE RESTROOM).
After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies.
