VI - P - TCS Food: Observed hot foods being held at 135°F or above; cold foods being held at 41°F or below. VI - TCS Food: Ready-to-eat, TCS food that had been date marked was not properly discarded when required.Observed tcs foods in walk--in cooler were passed the discard date.(black beans, pinto beans,black eyes peas,and a roast) In order to reduce the risk of a food borne illness due to bacterial growth all properly refrigerated tsc food must be discarded seven days after prep date.
