Corrected During Inspection Facility not maintained clean. Observed several rodent droppings located near the basement door entrance-way. Note: corrected during inspection.

Floors, walls, and/or ceilings not smooth and easily cleanable. Observed the food preparation table side missing paint, one ceramic base coving missing by the rear doorway, and one ceiling tile missing near the rear door entrance. resurface the above missing areas to properly restore a continuous smooth and easily cleanable surface characteristic.

Comments
Received a complaint stating: "Employees handling raw chicken refusing to wear gloves. Going back and forth from meat counter to pastry counter to lunch meat. Management states they do no have to wear gloves when handling raw chicken".

In today's inspection discussed with management whom informed as new employees arrive they are immediately conversed of the application of single-use gloves and tongs with the pastries. All employees are continuously communicated and monitored for complete separation between the tasks of raw chicken food handling and the ready-to-eat pastry food items. Between tasks a thorough twenty second hand washing occurs for all food handler employees. Management informs this protocol will be again communicated with all employees to ensure complete Public Food Safety to all the customers.
