Critical Equipment food-contact surfaces or utensils are dirty. OBSERVED FOOD CONTACT SURFACES (POTATO SLICER AND DELI SLICER) WITH A BUILD-UP OF FOOD DEBRIS.
To prevent contamination, equipment food-contact surfaces and utensils shall be clean to sight and touch. CORRECT BY CLEANING FOOD CONTACT SURFACES EVERY 4 HOURS WHILE IN USE AND STORE CLEAN. Correct By: 26-Jan-2018

3717-1-04.2(I) / Sanitizing solutions - testing devices.
There is no test kit available for measuring the concentration of the sanitizer. OBSERVED BAR AREA USING QUAT SANITIZER WITH A CHLORINE TEST KIT.
To ensure proper sanitization, a test kit or other device that accurately measures the concentration in PPM (mg/L) of sanitizing solutions shall be provided.
3717-1-06.4(F) / Drying mops.
Observed mops being dried using an unapproved method. OBSERVED MOP NOT BEING HUNG TO DRY.
After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies.
