Critical Corrected During Inspection Improper cooling of TCS food. OBSERVED BULK AMOUNTS OF SOUPS/SAUCES STORED IN ANNEX WALK-IN COOLER, SOME WITH LIDS WHILE IN THE COOLING PROCESS. ALL ITEMS WERE BROKEN DOWN INTO SMALLER QUANTITIES AND ICE BATHED IN WALK-IN FREEZER.
