Chicken soup hot holding was observed at 138 to 181 degrees fahrenheit with cold holding slice tomatoes at 37 to 39 degrees fahrenheit indicating a good temperature control in tcs, (time control safety), food monitoring.

Note: in regards to the administrations preference it was discussed and observed the hot holding chicken soup at 138 degrees fahrenheit was given extra heat to acquire their minimum holding of at least 180 degrees fahrenheit.
