EMPLOYEES SHOULD WEAR GLOVES TO PREVENT BARE HAND CONTACT OF READY TO EAT FOOD ITEMS. ALL EMPLOYEES SHOULD WASH HANDS BEFORE PUTTING ON GLOVES AND GLOVES SHOULD BE CHANGED WHEN TASKS ARE CHANGED.

VI - P - TCS Food: Raw animal food was being cooked to the required temperature. OBSERVED RAW FOOD ITEMS BEING COOKED TO THE REQUIRED TEMPERATURE. OBSERVED CHICKEN COOKED TO 165 DEGREES OR HIGHER. ALL RAW FOOD SHOULD BE COOKED TO THE PROPER TEMPERATURE TO AVOID FOODBORNE ILLNESS.

X - Chemical: Observed toxic materials improperly identified, stored and used. OBSERVED BLEACH STORED OVER SINGLE USE ITEMS AND SOAP STORED OVER RICE. ALL TOXIC MATERIALS SHOULD BE STORED PROPERLY AND AWAY FROM ALL DISHWARE, UTENSILS, OR FOOD. TOXIC CHEMICALS MAY BE PLACED UNDER FOOD OR DISHWARE WHERE NO CHANCE OF CONTAMINATION EXISTS

I - P - Employee Health: The operation had an employee health policy on file. OBSERVED AN EMPLOYEE HEALTH POLICY ON FILE FOR ALL THE KITCHEN EMPLOYEES. ALL FOOD EMPLOYEES MUST READ AND SIGN AND EMPLOYEE HEALTH POLICY WHICH CONTAINS THE COMMON FOODBORNE ILLNESS SYMPTOMS, THE 13 REPORTABLE DISEASES, AND A STATEMENT OF ACKNOWLEDGEMENT. THE POLICY MUST BE KEPT ON FILE AT ALL TIMES IN THE FACILITY.
