Critical PIC unable to demonstrate knowledge by having no critical violations. OBSERVED THERE TO BE CRITICAL VIOLATIONS AT THE TIME OF INSPECTION. PERSON IN CHARGE MUST MAINTAIN OVERSIGHT OF OPERATION TO ENSURE THAT CRITICAL VIOLATIONS DO NOT OCCUR.

Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. OBSERVED SUBWAY MAKE TABLES TO BE HOLDING TCS FOODS BETWEEN 49F AND 69F. ALL ITEMS WERE DISCARDED AND IDENTIFIED ON THE VOLUNTARY DESTRUCTION FORM.

Critical Insufficient air gap between the flood rim and the water supply inlet. OBSERVED PREP SINK DRAIN TO NOT BE PROPERLY AIR-GAPPED. DRAIN PIPE SHOULD BE SHORTENED TO HAVE AN AIR GAP OF AT LEAST TWO TIMES THE DIAMETER OF THE PIPE.

Inadequate equipment available for cooling, heating or holding food. OBSERVED ALL MAKE TABLES AND WALK-IN COOLER TO BE HOLDING TCS FOODS AT INADEQUATE TEMPERATURES DURING INSPECTION. MAINTENANCE CALLS WERE PLACED FOR SAME DAY SERVICE.

Facility not maintained clean. OBSERVED FLOOR UNDERNEATH SUBWAY POP DISPENSER TO HAVE AN ACCUMULATION OF DIRT AND DEBRIS.

Facility is undergoing ownership change and being rebranded from 7-Eleven. This inspection will also serve as a compliance inspection.
The Subway portion will remain unchanged but all 7-Eleven branded equipment (coolers, beverage dispenser, hot dog rollers) and menu items are being removed from the convenience portion of the store.
