Critical OBSERVED THE TEMPERATURE IN LOW-TEMP MECHANICAL DISH MACHINE WAS ONE HUNDRED AND TWO DEGREES FAHRENHEIT. TO EFFECTIVELY SANITIZE FOOD CONTACT SURFACES OF EQUIPMENT AND UTENSILS, IT IS MANDATORY THAT THE TEMPERATURE MUST BE IN ACCORDANCE WITH THE MANUFACTURER'S SPECIFICATIONS (120°F - 140°F). THE SANITARIAN INSTRUCTED THE PIC TO PROVIDE THE TEMPERATURE TO BE AT THE SPECIFIED LEVEL. FURTHERMORE, THE SANITARIAN INSTRUCTED THE PERSON IN CHARGE (PIC) TO DISCONTINUE THE USE OF THE MECHANICAL DISH MACHINE UNTIL SUCH TIME THAT IT IS REPAIRED.

Critical OBSERVED CHLORINE SANITIZER IN THE LOW TEMP MECHANICAL DISH MACHINE WAS GREATER THAN 100 PPM. TO SANITIZE FOOD CONTACT SURFACES AND EQUIPMENT EFFECTIVELY, IT IS MANDATORY THAT SANITIZER CONCENTRATIONS BE IN ACCORDANCE WITH THE MANUFACTURER’S SPECIFICATIONS (50 PPM – 100 PPM). SANITARIAN INSTRUCTED THE PERSON IN CHARGE (PIC) TO DISCONTINUE USAGE OF THE LOW-TEMP MECHANICAL DISH MACHINE UNTIL SUCH TIME IT IS ABLE TO PROVIDE THE SANITIZER AT THE SPECIFIED LEVEL .
