Critical Corrected During Inspection Person in charge did not ensure their employees are properly trained in food safety. Food employee in the meat department did not know the cold holding temperatures of the food.

3717-1-02.2 (C ) / Hands and arms: when to wash
Critical Corrected During Inspection Food employee(s) did not wash hands when required. After eating something in the deli the employee continued to work without washing their hands.

3717-1-05.1(O)(1) / Using a handwashing sink - accessible at all times
Critical Handwashing sink not accessible. The hand sink by the mixer in the bakery area is blocked and their is no access. This sink must be available at all times.

3717-1-03.4(F)(1)(a) / Time/temperature controlled for safety food - hot holding.
Critical Corrected During Inspection TCS foods not being hot held at the proper temperature. The shrimp was 118F, chicken tenders 115F, chicken wings 115F - 126F, fried chicken 120F in the hot display case. The bagel pizza with cheese sauce and pepperoni was on display at room temperature and was 63F.

Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. In the sushi case the rainbow roll was 43F, Philly roll 43F, Mashida Sushi was 43F and the Spicy Roll was 43F. The sushi was pulled from display.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. The date mark on the deli meats were marked for 8 days. If this happens again the product will be discarded.

3717-1-04.4(O) / Manual warewashing equipment - chemical sanitization using detergent-sanitizers
Detergent-sanitizer is not available to wash dishes in the two compartment sink in the meat department. Discontinue using the two compartment sink until an approved detergent sanitize is available to use.

3717-1-03.5(C)(3) / Food labels - bulk food
Bulk food for customer self-service not properly labeled, the donut and muffin case did not have information available for the items offered in a notebook that list the ingredients for each item.

3717-1-03.5(D)(5) / Modifying a packaged meat label without removing state or federal inspection legend
The meat inspection stamp was covered with the store label for the Adaptable meals boneless pork shoulder in the meat display case.

3717-1-03.2(K) / In-use utensils - between-use storage.
Corrected During Inspection In-use utensils improperly stored. A knife in the deli was stored in sanitizer between uses. There were two knives stored in crevices along the cooler in the Mahas station.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Facility not maintained clean. The floor is soiled under equipment in the bakery area. The floor is soiled under equipment in the deep fryer area. The bakery walk in refrigerator door is soiled.

3717-1-06.4(A) / Repairing.
There are several tiles missing on the wall be the grill. Replace tiles.

901:3-4-15(B) / Embargoing of food due to adulteration, misbranding, or expired baby formula or baby foods
Corrected During Inspection Food in an RFE must be embargoed due to adulteration, misbranding, or baby food or formula is expired. There were 4 containers plus a case of Gerber soy milk that was on display past the expiration date of October 2018. The product was destroyed.
