OBSERVED TCS FOODS HELD IN THE HOT HOLDING UNIT WERE NOT LABELED WHILE USING TIME AS A PUBLIC HEALTH CONTROL. TO LIMIT THE GROWTH OF MICROORGANISMS THAT CAN CAUSE FOODBORNE ILLNESS, WHEN TIME WITHOUT TEMPERATURE CONTROL IS USED AS THE PUBLIC HEALTH CONTROL UP TO A MAXIMUM OF FOUR HOURS, THE FOOD SHALL BE MARKED OR OTHERWISE IDENTIFIED TO INDICATE THE TIME THAT IS FOUR HOURS PAST THE POINT IN TIME WHEN THE FOOD IS REMOVED FROM TEMPERATURE CONTROL. AT THE TIME OF THE INSPECTION, THE PIC PROPERLY LABELED THE FOOD CONTAINERS IN THE HOT HOLDING UNIT.

Corrected During Inspection Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable. OBSERVED AN INTERNAL TEMPERATURE MEASURING DEVICE FOR THE WALK-IN COOLER HOLDING TIME/TEMPERATURE CONTROLLED FOR SAFETY (TCS) FOOD, AS WELL AS UNDERCOUNTER COOLERS, WAS NOT PROVIDED.

Corrected During Inspection Improper storage of food items. OBSERVED SACKS OF RICE STORED DIRECTLY ON THE FLOOR IN DRY STORAGE AREA.

Waste receptacles not covered properly. OBSERVED WASTE RECEPTACLE CONTAINING FOOD DEBRIS IN THE KITCHEN WAS NOT COVERED WHEN NOT IN USE.

Corrected During Inspection Mops dried improperly. OBSERVED MOP NOT PLACED IN A POSITION THAT ALLOWS IT TO AIR DRY.
