TO PREVENT BACKFLOW OF CONTAMINANTS INTO EQUIPMENT OR WATER SUPPLY SYSTEM ALL DRAINS SHALL BE PROPERLY OPERATING TO PREVENT A FOODBRNE ILLNESS.

Handwashing sink is being used for purposes other than handwashing. OBSERVED FOOD EMPLOYEE ATTEMPT TO THAW A PLANT BASED BURGER IN THE HANDSINK WHILE THE PIC WAS CHECKING THE WATER TEMPERATURE
3717-1-04.4(L)/Mechanical warewashing equipment - hot water sanitization temperatures
Hot water for mechanical sanitization is below required temperature. OBSERVED THE HIGH TEMPERATURE WAREWASHING MACHINE IS NOT REACING THE PROPER TEMPERATURE. TO PREVENT CONTAMINATION WHICH MAY LEAD TO A FOODBORNE ILLNESS THE MECHANICAL WAREWASHING UNIT SHALL BE PROPERLY MAINTAINED TO MEET THE PROPER OPERATING SPECIFICATIONS. CORRECT BY REPAIR/REPLACEMENT OF DAMAGED EQUIPMENT. NOTE: ALL UTENSILS AND EQUIPMENT SHALL BE MANUALLY SANITIZED IN THE THREE COMPARTMENT SINK UNTIL MECHANICAL WAREWASHING SINK IS OPERATING PROPERLY.
