V - P - Food from Approved Source: The operation maintained shell stock identification tags for at least 90 days. OBSERVED OYSTER TAGS THAT WERE KEPT ON FILE FOR AT LEAST 90 DAYS. IN THE EVENT OF A SHELLFISH RELATED ILLNESS, THE OPERATOR ENSURES THAT TAGS ARE KEPT ON FILE FOR TRACEABILITY.
VI - P - TCS Food: Observed hot foods being held at 135°F or above; cold foods being held at 41°F or below. OBSERVED TCS FOODS HELD AT PROPER TEMPERATURES IN COLD HOLDING. TO LIMIT THE GROWTH OF PATHOGENS THAT MAY CAUSE A FOODBORNE ILLNESS, THE OPERATOR ENSURED THAT TCS FOODS WERE HELD AT 41 DEGREES F OR BELOW IN THE REACH IN COOLERS.

OBSERVED A CONSUMER ADVISORY ON THE MENU. TO PROPERLY INFORM CONSUMERS, THE OPERATION INCLUDED A CONSUMER ADVISORY WITH AN ASTERISK NEXT TO THE RAW/UNDERCOOKED FOOD ITEMS ON THE MENU.
