TO PREVENT CONTAMINATION OF FOOD, CONTACT SURFACES AND UTENSILS SHALL BE CLEAN TO SIGHT AND TOUCH. THE SANITARIAN INSTRUCTED THE PERSON IN CHARGE (PIC) TO CLEAN THE ICE MACHINE'S EXTERIOR.

OBSERVED ALL THREE ICE BIN CONDENSATE LINES IN THE TWIST BAR AREA WERE NOT PROPERLY AIR GAPPED. TO PREVENT BACKFLOW AND CONTAMINATION OF THE FOOD AND EQUIPMENT, THE CONDENSATE LINES SHALL BE AT LEAST ONE INCH ABOVE THE FLOOR DRAIN. SANITARIAN INSTRUCTED THE PERSON IN CHARGE (PIC) TO ENSURE THAT THE CONDENSATE LINES ARE ONE INCH ABOVE THE FLOOR DRAIN.

PERSON IN CHARGE (PIC) STATED THAT THEY ARE NO LONGER GOING TO BE USING THE REDUCED OXYGEN PACKAGING (ROP) MACHINE ANYMORE; THEREFORE, THEY WILL NOT HAVE TO WRITE UP HACCP PLANS. ALSO, THE DUMPSTER AREA NEEDS TO BE CLEANED UP COMPLETELY AND THE LIDS OF THE DUMPSTER MUST REMAIN CLOSED AT ALL TIMES.
