No towels or drying device at the handwashing sink(s). Observed unavailable towel dispensor at the food preparation handwashing sink. Provide a towel dispensor at the food preparation handwashing sink.

Improper use and/or maintenance of wiping cloths. Observed the improper use and/or maintenance of wiping cloths. In between uses properly store wiping cloths located on all food preparation surfaces in the kitchen. In regards to the Foodborne illness investigation compliant findings at this time of inspection based on discussion and observation of tcs foods with Canary's management. Observed tcs foods cooked, reheated, hot held, and cooled down in the
walk-in cooler with proper required temperatures in accordance to time control safety food.
Note: to ensure complete customer food safety Canary's staff continuously monitors all stored and reheated TCS food items to ensure complete food safety for the all customers.

CRITICAL CONTROL POINT INSPECTION
IV - P - Demonstration of Knowledge: The person in charge is Certified in Food Protection. CDPH observed staff employee with ODH certification.
VII - Protection from Contamination: Foods need to be protected at all times from physical and environmental contamination during storage, preparation, holding and display. Observed food product stored in direct contact with the kitchen floor. Discussed with management of the good processes of storing food product to prevent cross contamination which can cause a foodborne illness. Staff immediately elevated the exposed food product from the floor.
VI - P - TCS Food: Observed ready to eat TCS foods being properly date marked, and discarded when required. CDPH informed staff TCS foods being properly date marked, and discarded when required is a good preventitive in the growth of organisms which can cause a foodborne illness.
X - P - Chemical: Toxic materials are properly identified and stored.
