Critical Repeat Date the last shellstock was sold or served was not recorded on the label. Several of the shellfish tags for the clams did not have the date the last one was sold.

3717-1-03.1(R)(1) / Shellstock - maintaining identification.
Critical Shellstock tags improperly removed from the container. The shellstock tag was not with the clams.

3717-1-04.5(A)(1) / Cleanliness of equipment food-contact surfaces and utensils.
Critical Corrected During Inspection Equipment food-contact surfaces or utensils are unclean. The ice tea nozzle was soiled.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. The finger potatoes were 43F and the butter bean Rangoon was 43F on the top of the sandwich block.

3717-1-03.4(K) / Reduced oxygen packaging without a variance- criteria.
Critical Improper packaging of food using reduced oxygen packaging without a variance. Currently cooking, cooling, then ROPing pork short ribs. This process requires a variance from the state. There also no HACCP plan for this process. Discontinue practice.

3717-1-03.4(L) / Contents of a HACCP Plan
Critical Incomplete HACCP plan. The HACCP plan for the items that are ROPed does not include the required information. Discontinue ROPing food until a HACCP plan is provided that contains all the reqired information.
