VII - P - Protection from Contamination: Foods are protected from physical and environmental contamination during storage, preparation, holding and display. OBSERVED FOOD ITEMS THAT WERE PROTECTED FROM CONTAMINATION DURING STORAGE. TO PREVENT CONTAMINATION THAT MAY CAUSE A FOODBORNE ILLNESS, FOODS WERE PROPERLY STORED IN THE COOLER WITH PROTECTIVE COVERING.
I - P - Employee Health: The operation had an employee health policy on file. THE OPERATION REQUIRED FOOD EMPLOYEES TO REPORT INFORMATION ABOUT THEIR HEALTH TO THE PERSON IN CHARGE AS IT RELATES TO ILLNESS THAT CAN BE TRANSMITTED THROUGH FOOD.
VI - P - TCS Food: Observed ready to eat TCS foods being properly date marked, and discarded when required. OBSERVED TCS FOODS PROPERLY DATEMARKED THROUGHOUT THE FACILITY. TO LIMIT THE GROWTH OF PATHOGENS THAT MAY CAUSE A FOODBORNE ILLNEES, TCS FOODS WERE DATEMARKED IF HELD MORE THAN 24 HOURS AND USED WITHIN 7 DAYS OF THE PREPARATION DATE.
