Critical PIC unable to demonstrate knowledge of foodborne disease and the significance of maintaining time/temperature controlled for safety food. Tcs food held at 50 degrees.

3717-1-02.4(B)(2)(g) / PIC: Demonstration of Knowledge - Stating required temperatures and times for safe storage, holding, cooling, reheating of TCS food
Critical PIC unable to demonstrate knowledge of temperatures and times for safe refrigerated food storage, hot holding, cooling and reheating. Walk in cooler at 50 degrees at least 5 days, no repairs, etc.

3717-1-02.4(B)(2)(j) / PIC: Demonstration of Knowledge - Explaining relationship between food safety and proper equipment
Critical PIC unable to demonstrate knowledge of relationship of food safety and safe and adequate equipment. Unsafe walk in cooler in disrepair for at least five days.

3717-1-02.4(C)(9) / PIC: duties - ensure employees are properly maintaining temperatures of TCS foods during hot and cold storage
Critical PIC did not ensure employees are proplerly maintaining temperatures of TCS foods during hot and cold storage. No employee monitoring walk in cooler temp for at least 5 days. No temperature logs were available. Ensure temp of equipment are being monitored at least daily. Use appopriate logs to ensure temps are correct. Take appropriate action if temps rise above the mandated standards.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical TCS foods not being cold held at the proper temperature. Observed TCS foods in the walk-in cooler are being cold held at 50 degrees F. Operator stated cooler has been broken since at least 10/01/2022. To prevent contamination, spoilage and food borne illness all TCS foods must be held at 41 degrees and bellow. All TCS foods in the walk-in cooler were discarded and denatured.

3717-1-04.1(Y) / Temperature measuring devices.
Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable. No thermometer for the walk in cooler. Outside thermometer was broken, no holding thermometers inside the unit. Provide adequate thermometers to readily determine if unit is at appropriate temperatures.

3717-1-06.4(A) / Repairing.
Physical facilities not maintained in good repair. The walk-in cooler is in disrepair. Ambienty air temperature of this unit is 50 degrees F. Restore this unit to proper working order. Unit must be capable of storing TCS foods at 41 degrees F and below.

Operator voluntarily closed the facility today. Operator will not re-open until walk-in cooler is capable of holding/storing all foods at 41 degrees F, or below. Refrigeration repairman arrived at the facility today, during inspection time. All affected food items, in the walk in cooler, were discarded and denatured today.
