Comments
Received a complaint stating "Cock roaches in kitchen and food areas".

In today's inspection a thorough search throughout the FSO sanitarian observed and discussed with management under the kitchen equipment there is a light build-up with two observed live roaches near the underneath of the cooking equipment. The owner informs the protocol requiring a continuous maintenance by food handler employees and the exterminating company Abell which just performed another application on 3-2-2024 and is performing a roach removal application tomorrow Mar. 12th is in the effort of the continuous elimination of this roach pest activity.

In addition, owner informs the renewed FSO license is expected to arrive soon as payment was recently properly made.
CRITICAL CONTROL POINT INSPECTION
IV - Demonstration of Knowledge: The Person in Charge (PIC) did not comply with this chapter by having no critical violations during the current inspection. To comply with this Chapter and exercise active managerial control over the facility, the PIC shall have no critical violations during the current inspection, which decreases opportunities for foodborne illness outbreaks. The Inspector reviewed with the PIC the chapters in the Code where the critical violations are addressed. In addition, the Inspector educated the PIC on the public health significance of each critical violation. Finally, the Inspector outlined ways to prevent critical violations during future inspections
VII - Protection from Contamination: Foods need to be protected at all times from physical and environmental contamination during storage, preparation, holding and display. Observed and discussed with management under the kitchen equipment there is two active roaches. Sanitarian discussed with management by fully eliminating any roach pest activity is a good preventitive of potential cross-contamination which can cause a foodborne illness. Note: Sanitarian observed in discussion with management exterminating company Abell is scheduled to perform a roach removal application tomorrow Mar. 12th in the effort of this full elimination of roach pest activity.
X - P - Chemical: Toxic materials are properly identified and stored.
VI - P - TCS Food: Observed ready to eat TCS foods being properly date marked, and discarded when required. Sanitrarian informed staff TCS foods being properly date marked, and discarded when required is a good preventitive in the growth of organisms which can cause a foodborne illness.


Inspection Outcome:
