Critical Corrected During Inspection Chlorine sanitizing solution at incorrect temperature and/or concentration. OBSERVED 3-BAY SINK SANITIZER TO BE BELOW 50 PPM. PIC ADDED MORE SANITIZER DURING INSPECTION TO BRING SOLUTION TO 50 PPM. AS A REMINDER, CHLORINE-BASED SANITIZERS MUST TEST BETWEEN 50 AND 100 PPM.

Outdoor refuse areas were not properly constructed. OBSERVED FLUID LEAKING FROM TRASH COMPACTER TO BE COLLECTING CLOSE TO BUILDING. NO DRAINS ARE IN THE AREA TO COLLECT FLUID.

Light intensity less than fifty foot candles in required areas. OBSERVED LIGHT FIXTURE OVER ROLLER GRILL IN PIZZA HUT AREA TO BE TURNED OFF RESULTING IN 26 FOOT CANDLES OF INTENSITY IN THE AREA. LIGHT WAS TURNED OFF DUE TO CORRELATING STROBING EFFECT IN LIGHT OVER HOT HOLDING. LIGHTING SHOULD BE REPAIRED OR REPLACED TO PROVIDE AT LEAST 50 FOOT CANDLES.
