Critical Refrigerated, ready-to-eat, TCS foods held refrigerated for more than 24 hours were not properly date marked. BAKED BEANS ARE NOT BEING DATE-MARKED.
To prevent foodborne illness, refrigerated, ready-to-eat, TCS food held at a temperature of 41°F or less for more than 24 hours shall be clearly marked at the time of preparation or the time the original container is opened to indicate the date or day, that is a maximum of seven days, by which the food shall be consumed, sold, or discarded. Miscellaneous sources of contamination observed. FOOD SERVING SPOON FOR COLD-SLAW WAS OBSERVED BEING STORED ON TOP OF STORAGE BIN.
Food shall be protected from contamination that is not specified under 3717-1-03.2 (A) to (X). SERVING SPOON NEEDS TO BE STORED IN AN ISOLATED CONTAINER.
3717-1-04.2(G)(1) / Food temperature measuring devices - availability
A food thermometer was not readily accessible.
To prevent foodborne illness, food temperature measuring devices shall be provided and readily accessible for use.
3717-1-06.1(C) / Floor and wall junctures - coved, and enclosed or sealed.
The floor and wall junctures are not properly coved or closed, or floor drains were not provided. HANDSINK IS NOT PROPERLY SEALED TO WALL.
In FSO's or RFE's in which cleaning methods other than water flushing are used for cleaning floors, the floor and wall junctures shall be coved and closed to no larger than one thirty-second inch; where water flush cleaning methods are used, shall be provided with drains and be graded to drain, and the floor and wall junctures shall be coved and sealed. PIC NEEDS TO APPLY CAULKING TO SPACE BETWEEN HANDSINK AND WALL.
3717-1-06.4(B) / Cleaning - frequency and restrictions.
Observed a build-up of dirt and debris. OBSERVED DIRT BUILD-UP ON STORING BIN.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed. PIC MUST CLEAN OR REMOVE STORING BIN.
