VII - Protection from Contamination: Equipment food-contact surfaces or utensils are dirty.Observed a deli slicer with visible food n debris on its food contact surfaces. Upon questioning, person-in-charge (PIC) related that he did not know when slicer was last cleaned before lunch. To prevent growth of potential foodborne illness causing pathogens, food contact surfaces must be washed, rinsed, sanitized, and air dried every 4 hours while in use, and stored clean. Inspector instructed PIC to disassemble the deli slicer and wash, rinse, sanitize, and air dry all parts before using again.
III - P - Preventing Contamination by Hands: Observed food employee washing hands prior to donning single use gloves.
IX - P - Highly Susceptible Populations: Pasteurized eggs are used if served partially cooked.
