Critical Repeat Corrected During Inspection Handwashing sink is being used for purposes other than handwashing. OBSERVED HANDWASHING SINK IS BEING USED FOR OTHER PURPOSES AND FOOD DEBRIS WAS FOUND IN THE SINK. PIC STATED SINK WILL ONLY BE USED FOR HANDWASHING.

Critical Repeat Corrected During Inspection Chlorine sanitizing solution at incorrect temperature and/or concentration. OBSERVED DISHWASHER HAD NO SANITIZER IN THE 3 COMPARTMENT SINK. THEY STATED THAT NO SANITIZER WAS USED FOR WASHING POTS AND PANS. DISHWASHER AND PIC INFORMED THAT COMET CLEANSER IS NOT SUFFICIENT FOR SANITIZER AND POTS, PANS, AND LARGE ITEMS NOT PUT THROUGH DISHWASHER ARE TO BE PLACED IN SANITIZER.

Critical Repeat Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. OBSERVED NO ITEMS WERE DATEMARKED IN THE 4 DOOR COOLER OR WALK IN COOLER THAT NEEDED DATEMARKS. KITCHEN STAFF DATEMARKED ALL ITEMS THAT NEEDED DATEMARKS SUCH AS PASTA, PASTA SALAD, GREENS, CHILI, AND POTATO SALAD. IN FUTURE INSPECTIONS, TCS READY TO EAT FOODS WITHOUT DATEMARKS NOT PREPARED THAT DAY WILL BE THROWN AWAY AT THE TIME OF INSPECTION.

Non-durable equipment observed. OBSERVED ALMOST ALL RUBBER BAKING SPATULAS IN THE FACILITY ARE CRACKED AND HAVE CHIPPED EDGES. PLEASE REPLACE DAMAGED SPATULAS.

III - Preventing Contamination by Hands: Observed no supply of hand cleaning liquid, powder or bar soap at the handwashing sink(s). OBSERVED NO SOAP OR PAPER TOWELS AT THE HANDWASHING SINK IN THE KITCHEN. IN ORDER TO PROMOTE GOOD HYGIENE AND PREVENT CONTAMINATION, ALL HANDWASHING SINKS SHOULD BE PROPERLY SUPPLIED WITH WARM WATER, SOAP, PAPER TOWELS, AND HAND WASHING SIGNS. PIC STATED PAPER TOWELS AND SOAP WILL BE PLACED AT THE SINKS.

VI - P - TCS Food: Observed hot foods being held at 135°F or above; cold foods being held at 41°F or below. OBSERVED ALL COLD TCS FOOD HELD AT 41 DEGREES F AND BELOW AND SOUP BEING HOT HELD AT 135 DEGREES F OR ABOVE. IN ORDER TO PREVENT THE GROWTH OF PATHOGENS, ALL TCS FOOD SHOULD BE KEPT OUT OF THE TEMPERATURE DANGER ZONE WHICH EXISTS ABOVE 41 DEGREES F AND BELOW 135 DEGREES F.

VI - TCS Food: Refrigerated, ready-to-eat, TCS foods held refrigerated for more than 24 hours were not properly date marked. OBSERVED MULTIPLE ITEMS IN A FOUR DOOR COOLER AND PASTA SALAD IN THE WALK IN COOLER WERE NOT DATEMARKED. IN ORDER TO PREVENT THE GROWTH OF PATHOGENS, PRIMARILY LISTERIA, ALL READY TO EAT TCS FOOD SHOULD BE DATEMARKED WITH THE DAY OF PREPARATION AND DISCARDED WITHIN 7 DAYS. KITCHEN STAFF DATEMARKED ALL FOOD AT THE TIME OF THE INSPECTION.

VII - Protection from Contamination: Observed improper storage of food items. OBSERVED FOOD STORED ON THE GROUND IN THE WALK IN COOLER. IN ORDER TO PREVENT CONTAMINATION, FOOD SHOULD BE STORED AT MINIMUM 6 INCHES ABOVE THE GROUND. KITCHEN STAFF MOVED FOOD ON THE FLOOR OF THE COOLER.
