THE OPERATION WAS USING TIME AS A PUBLIC HEALTH CONTROL FOR CUT TOMATOES AND LETTUCE AND THE FOOD ITEMS WERE NOT MARKED. THE OPERATION SHALL ENSURE THAT THE FOOD ITEMS HAVE AN INITIAL TEMPERATURE OF 41 DEGREES F OR BELOW WHEN REMOVED FROM TEMPERATURE CONTROL, THE FOOD IS MONITORED TO ENSURE THAT THE IT DOES NOT EXCEED 70 DEGREES F, AND THAT THE FOOD IS MARKED/IDENTIFIED OF THE TIME THAT IS SIX HOURS PAST THE POINT IN TIME WHEN IT WAS REMOVED FROM TEMPERATURE CONTROL.

TO PROPERLY INFORM CONSUMERS, A CONSUMER ADVISORY WITH AN ASTERISK WAS INCLUDED ON THE MENU TO IDENTIFY RAW/UNDERCOOKED ANIMAL PRODUCTS.
VI - TCS Food: Observed improper use of time as a public health control for up to six hours. THE OPERATION WAS USING TIME AS A PUBLIC HEALTH CONTROL FOR CUT LETTUCE AND CUT TOMATOES AND THE FOOD ITEMS WERE NOT MARKED WITH THE DISCARD TIME.
